Creamy Black Bean Chicken Soup

Growing up, my dad was the cook. He is amazing at mixing this and that, not measuring a thing, and having a beyond awesome dinner ready - usually in 30 minutes or less. My mom on the other hand, made the grilled cheese, macaroni-and-cheese with hot dogs, and hot dog potato boats. (Never had one?? First, I'm terribly sorry. Second, here is the recipe so go make one!) Funny thing is - my siblings and I always looked forward to those simple, "mom-made" meals. One of my favorites she would make is this Creamy Black Bean Chicken Soup. All you do is throw your ingredients in the crock pot, go to work/school/church, come home and voila - one of the easiest and tastiest soups I've found yet!


Creamy Black Bean Chicken Soup
4 SERVINGS 
PREP: 10 minutes           COOK: 3 hours            READY IN: 3 hours 10 minutes

INGREDIENTS


  • 2 chicken breasts
  • 1 cup chicken broth
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 1 package taco seasoning
  • 1/2 cup sour cream (optional)
  • 1/2 cup cheddar cheese (optional)
  • Tortilla chips 

DIRECTIONS


  1. Place chicken in crock pot. Pour broth, beans, corn, salsa, and taco seasoning over chicken. 
  2. Cook on low for 6 hours (or high for 3 hours). 
  3. Remove chicken and shred. Re-add chicken.
  4. If desired, add sour cream and cheese to crock pot. Stir until smooth. (Or add desired amount to individual servings)
  5. Serve with tortilla chips.

This was so yummy! However, it states that it serves 8. I'm not sure if that was a typo, but there was just enough for 4 adults even with a side salad and some garlic bread. So delicious though, thanks for sharing the recipe!

Is there enough broth for the soup with only 1 cup?

There is usually enough broth - but it is a thicker soup for sure. If you added more I'm sure it would still turn out great!

I added an extra chicken breast and about half a cup more of both broth and beans. It ended up having a more chili type texture, but it was delicious. My picky boyfriend even loved it!

I made this for my husband and I and we loved it! Do you think if I doubled the recipe it would still cook in the same amount of time?

We're glad you liked it, Emily! I imagine that as long as you're cooking it in a large enough crock pot, that doubling it would still allow it to cook in the same time. Let us know if you try it.

Yes!! Just plop them in your crock pot, cover with the rest of the ingredients, and it will still cook perfectly. Might just take a little extra time :)

Is this 2 whole breasts, or 2 breast halves? 2 breast halves didn't seem like enough but I didn't want to add more and mess up the ratios. I make chicken tacos exactly like this but I leave out the broth. After it cooks all day, I shred the chicken right in the crock pot and serve n tortillas with whatever taco toppings we like. Very yummy!

Making this for dinner tonight. I am using a large can of chicken and half a packet of taco seasoning (my husband doesn't do spicy). Smells amazing, can't wait for dinner!

I made this tonight. I actually had leftover chicken so I just did it all on the stove. Turned out well!
We basically used it as a dip for our chips. As a "dip" we were even able to convince our 2 year old to try it.

I doubled the recipe and my soup isn't as creamy as I think it is supposed to be. What do you suggest to thicken it up? I usually do refried beans for a soup like this, however, wanted to see if you had any other suggestions. Thank you!

1 cup of broth is definitely not enough -- I would say 1 box (32 oz) is more like it!

Very good w/o tortila chips!

Is there a way I can substitute the taco seasoning? That stuff makes me sick.

I am so glad that I stumbled upon your delicious soup! Your recipe is exactly why I love to use the crockpot...no fuss, no muss. When I read "dump and go", I knew this was a keeper! If I have to start sauteeing, whisking or pre-cooking something, I may as well just fix it on top of the stove. The crockpot exists to make life a bit easier! Jeez...don't I sound like a grump?! Anyway, we loved this! Thank you.
