INGREDIENTS
- 1/4 cup part skim ricotta cheese
- 1 teaspoon reduced sugar red raspberry preserves
- 1 cup fresh raspberries
- 1 tablespoon lemon juice
- zest from half lemon
- 2 tablespoons honey
- sliced almonds for topping
DIRECTIONS
- In a small bowl mix together your ricotta and raspberry jam.
- In a separate bowl mix your fresh (or thawed) raspberries with lemon juice, zest, and honey.
- Top ricotta mixture with your raspberries. Top with sliced almonds for a little crunch.
