INGREDIENTS
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup sugar
- 2 eggs
- 1/3 cup unsweetened applesauce
- 4 ripe bananas, mashed
- 1 tablespoon vanilla extract
- 1 cup raisins (optional)
- 1 cup chopped walnuts (optional)
DIRECTIONS
- Preheat oven to 375°.
- In a large bowl mix flour, soda, cinnamon, nutmeg, and sugar.
- Add eggs, applesauce, bananas, and vanilla. (If desired, add raisins and walnuts.)
- Pour batter into lightly greased and floured 9x5 inch loaf pan.
- Bake for 45-60 minutes or until inserted fork comes out clean.
