Whole Wheat Pizza Dough

I've told you about our weekend ritual of having pizza on one of the weekend nights. It's something my kids look forward to every week and it provides us all with some much needed downtime. Though I love the Cauliflower Pizza Crust, changing things up is a good thing too. That's why I'm so happy I stumbled across this whole wheat pizza dough. It's amazing and sooooo filling. It's my go-to pizza dough and my kids love it too!

*As you're making this, keep in mind, I live in high altitude so you may not require as much flour. You can remedy that by adding more water to the mixture, or cutting down the flour to start. I would recommend adding more water. You can do it slowly and once the mixture makes a ball, you'll be good.*


Whole Wheat Pizza Dough
MAKES 2 MEDIUM PIZZAS (I usually double the recipe and get 3 big pizzas out of it)
PREP: 10 minutes         RISE: 70 minutes          READY IN: 80 minutes + 15-20 minutes cook time

INGREDIENTS


  • 1 1/2 cups white whole wheat flour 
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons dry instant yeast
  • 1 teaspoon kosher salt
  • 1 cup warm water
  • 1 tablespoon olive oil
  • 1 teaspoon honey

DIRECTIONS


  1. In a mixer, with a flat beater, combine flour, yeast and salt. 
  2. Add 1/2 cup water, olive oil and honey to the mixture.  
  3. On the mixer, switch out the flat beater for the dough hook. 
  4. Add the remaining 1/2 cup of water (and more, if needed). You will know when the dough is ready if all the dough balls up around the dough hook, away from the sides of the bowl, and when you raise the hook, the dough stays on it.
  5. Knead the dough until it's smooth and elastic (about 3 minutes).
  6. Place back in the mixing bowl, and let rise for about an hour, or until it's doubled in size.
  7. Cut dough into 2 (or 4 if you want personal size), and knead into small balls. Let rise for another 10 minutes.
  8. At this point, either start prepping your pizza, or freeze dough for later use.
  9. If you're making your pizza now, top with sauce and toppings and place in the oven at 350º and cook for 15-20 minutes.

Recipe Refresh: Cornbread

We've already talked about how I prefer cinnamon rolls with my chili, but the hunt still continues as I try to make them even somewhat healthy. :) Before we started this blog, I swore by Jamie Cooks It Up's cornbread recipe. It's delicious, but I knew it wasn't the healthiest of cornbread. And was I right! 222 calories per piece! Woah momma! With my refresh, I was able to whittle this down to 73 calories per piece and you can see more of the nutritional comparisons below the recipe.

I added some whole grains and whole wheat flour, substituted applesauce for oil and honey for sugar, and voilà: Healthier Cornbread! Now we can eat cornbread and feel good about all the whole grains and nutrients we are getting (...at least that's what I tell myself). Since I substituted applesauce for oil, it makes the cornbread more moist than dry. I like it, but I realize a softer cornbread may not be for everyone so you may want to use 1/4 cup oil instead.

INGREDIENTS


  • 2 eggs
  • 1 cup milk
  • 1/4 cup applesauce
  • 1/8 cup honey
  • 1 cup whole wheat flour (I use King Arthur's white whole wheat)
  • 3/4 cup whole grain cornmeal (I use Bob's Red Mill)
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder

DIRECTIONS


  1. Preheat oven to 350ºF and grease a 9x9-inch baking pan.
  2. In a mixer combine eggs, milk, applesauce and honey. Mix until well blended, about 3 minutes.
  3. Add flour, cornmeal, salt, and baking powder and mix for a couple minutes.
  4. Pour the mixture into the pan. Bake for 25-30 minutes.

Quick & Easy Wheat Dinner Rolls

SCENE: It's Sunday afternoon and I have a wonderful roast (or something just as wonderful) cooking itself in my best friend: the crockpot. It's been cooking while we've gone to church and have taken cat naps in the afternoon (that's the real reason why the crockpot is my best friend... it gives me naps!). The house smells lovely, and I'm about an hour away from putting dinner on the table.

ME: "What's that? We don't have any sides to go with this roast that I slaved over?"

(dead air... because really, nobody cares...)

And here's how I solve "the no sides" issue. My kids will eat bread like it's nobody's business and I always have these ingredients on hand. Combine this with some veggies and voila! Dinner is served! Here's how I whip up rolls in a 40 minutes. (YES, 40 minutes!)


Quick & Easy Wheat Dinner Rolls
12 SERVINGS 
PREP: 12 minutes           COOK: 28 minutes            READY IN: 40 minutes

INGREDIENTS


  • 1 1/4 cups wheat flour (I use King Arthur's white whole wheat)
  • 1 cup white flour, divided
  • 2 tablespoons honey
  • 1/2 teaspoon salt
  • 2 1/4 teaspoons active yeast (or 1 package)
  • 1 cup milk
  • 3 tablespoons butter, softened
  • 1 egg beaten

DIRECTIONS


  1. Preheat oven to 170º.
  2. Heat up milk in microwave for 2 minutes on high.
  3. In a mixer combine wheat flour with a 1/2 cup white flour, egg, honey, warm milk, salt, and butter. Mix for 1 minute.
  4. Add yeast and mix for 30 seconds.
  5. Add remaining white flour (1/2 cup) and mix for 1 more minute. The dough should not be sticking to the sides at this point. If it is, add more flour, a little at a time, until it's all staying in a big ball.
  6. Grease a muffin pan, and cut the dough into 12 equal parts, with one in each muffin cup. (No need for perfection here, just do your best).
  7. Place into the oven and bake for 15 minutes, or until dough has risen to about twice the size. 
  8. Set the oven to 350º and bake for 13 more minutes, or until rolls are slightly golden. (Leave the rolls in the oven while the oven is climbing to 350º).
  9. Optional: butter tops of the rolls.
  10. Serve!

Pumpkin Oatmeal Cacao Cookies

My sister, Julie, gave me this incredible recipe for trail cookies a couple weeks ago, which I hope to share with you soon! But first I wanted to modify it to incorporate pumpkin, since I'll be the first to admit that is about all I can think about in the kitchen these days. That and cinnamon. I love fall and it's perfect for baking. These are so delicious and the plate of cookies was gone in less than a day at our house. They're only about 50 calories a cookie, and they are the perfect mix of what fall should taste like. It's like a fall party in your mouth!


Pumpkin Oatmeal Cacao Cookies

PREP: 8 minutes           COOK: 12 minutes            READY IN: 20 minutes

INGREDIENTS


  • 1/2 cup applesauce
  • 1/4 cup honey
  • 1/8 cup pumpkin puree
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 1/4 cup whole wheat flour (I use King Arthur's white whole wheat)
  • 1 heaping teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon unsweetened cocoa
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup rolled oats
  • 1/4 cup cacao chocolate chips, chopped

DIRECTIONS


  1. Preheat oven to 325º.
  2. In a large bowl (or mixer), combine the first 5 ingredients (applesauce, honey, pumkin puree, egg, and vanilla).
  3. Add all the dry ingredients and mix together.
  4. Hand mix in cacao chips.
  5. Place on cookie sheet lined with parchment paper. Bake for 12 minutes, or until golden brown on the bottoms.

Date-Sweetened Apple Pecan Cookies

One of the pleasant surprises I encountered when we first moved to the California Bay Area was that, although we enjoy gorgeous weather year-round, there are also still distinct changes in the seasons. They are different than the usual four season changes that I was used to (we seem to skip winter altogether and just go from fall to spring), but they are definitely there. Fall is particularly beautiful, with the days starting to cool off just enough, the trees turning beautiful shades of red, orange, and yellow, and the pine cones and acorns which start to fall from the trees and line the sidewalks. I tell you this, of course, because all of these signs of fall make me start to think of fall recipes and all the things that can be created with cinnamon, nuts, apples, apricots, pumpkins, zucchini, etc., etc., etc.

These cookies were born from recent musings on fall baking as I was out enjoying the cool fall air on a walk with my daughter. I wanted to find a way to use dates as the primary sweetener in a cookie. Building on a recipe I found at Anja's Food 4 Thought, my first attempt, I have to admit, came out not quite sweet enough for my taste. I decided to add in just a bit of honey to boost the sweetness, along with a very light coating of cinnamon and powdered sugar so that it still felt like a cookie rather than a very small biscuit. These apple-pecan cookies were the result. They are a mildly sweet, cinnamony cookie, with hints of the apple and pecan coming through. The texture is somewhere between a shortbread and biscuit if you eat them the same day, but if you have the will power to let them sit until the next day (something I, my husband, and my preschooler struggle with!) they become more of a shortbread, allowing the crunchy pecan texture to come through even more.

Date-Sweetend Apple Pecan Cookies
Makes 15-20 cookies
PREP: 20 minutes    CHILL: at least 60 minutes       COOK: 12-15 minutes            READY IN: 1 hour 40 minutes

INGREDIENTS


  • 1/2 cup dates (10-12 dates), roughly chopped and soaked in water for about 20 minutes
  • 1/4 cup butter, room temperature
  • 1/4 cup chopped pecan pieces
  • 1 teaspoon vanilla
  • 1 tablespoon honey
  • 1/2 teaspoon cinnamon
  • 1 egg
  • 1 cup white whole wheat flour
  • 1/4 cup diced dried apple pieces (or dried apricots)
  • 2 tablespoons powdered sugar
  • 1 teaspoon powdered cinnamon

DIRECTIONS


  1. Drain most of the water off of the dates (they should be somewhat soft). In a food processor, pulse the soaked dates with the butter to a smooth consistency.
  2. Add the pecan pieces, and pulse about 30 seconds to break down the pecans into fine pieces.
  3. In a bowl, combine the dates, butter, and pecans with the vanilla, honey, cinnamon, egg, and flour. The dough may be sticky, but should hold together and not be at all runny. Mix in the dried fruit pieces.
  4. Chill the dough in the refrigerator for at least 60 minutes. Preheat oven to 350º.
  5. With the chilled dough, form balls about 1 inch in diameter. Place on baking sheet lined with parchment paper (they won't grow so they can be placed fairly close together).
  6. Cook for 12-15 minutes, until the cookies no longer look shiny on top. Remove and let cool just a couple of minutes. Combine powdered sugar and cinnamon, and roll warm cookies in the cinnamon-sugar mixture until lightly covered.

If you're willing to splurge a little more with the butter, these could even be transformed to be more like a riff on Mexican wedding cookies. Because I was trying to keep these still within the mostly-healthy realm, I decided to save that experimentation for another day.
