Skinny Shrimp Potato Chowder

We have declared this a winter of soups at our house. Anyone else? It just feels so cold all the time and soup seems to bring that needed warmth and comfort. Funny thing is, we lived in Minnesota last winter, and this winter in Colorado should feel quite warm to us, but I guess it's easy to forget -40º weather and anytime the weather is subzero, it feels cold.

This soup is very easy to make and it tastes wonderful! If you or your children aren't quite sure of shrimp, feel free to omit it, but I think it brings a nice texture and flavor to the soup.


Skinny Shrimp Potato Chowder

INGREDIENTS


  • 6-8 potatoes, peeled and diced
  • 2 cups frozen corn
  • 12 ounce bag small pre-cooked shrimp
  • 1 1/2 cups water
  • 1/4 cup green onion (use the white ends for the soup, and reserve the green ends for the toppings for the soup)
  • 3 cups skim milk
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

DIRECTIONS


  1. In a large pot, boil potatoes in water until cooked. Drain water.
  2. Add corn, shrimp, water, and white onions. Bring to a boil.
  3. Combine milk and flour in a separate container. Add to soup while stirring.
  4. Bring to a boil and then reduce heat to medium/high and cook until it thickens. (It took about an hour for me).
  5. Add salt and pepper (to taste).
  6. Serve with toppings if you'd like. We like green onions and bacon. Cheese would be yummy too.

Pomegranate Pear & Apple Salad

I've fallen in love with many salads over the years, but this one is my favorite this time of year. The colors are perfect for the holidays and it's a nice mix of fruit and veggies. And it has pomegranates which is a huge score in my salad-book. :) I love those crunchy little fruit bites. I took this salad to a Christmas party last week that was potluck style and received many compliments on the dish. It's a flavorful salad that is tangy, tart, crunchy, sweet and sour. It's also very versatile. You could maybe even add mango, pineapple, or nuts to this salad and it would be wonderful! I used spinach, but you could also use baby greens or arugula and it would taste incredible. If you'd rather buy your dressing, it would be great pair with just about any vinaigrette. I'm all about working with what I have so I encourage you to do the same.


Pomegranate Pear & Apple Salad

INGREDIENTS


SALAD:
  • 6 cups chopped spinach
  • 2 gala apples, cored and diced (use a tart, crisp apple if you don't have gala on hand)
  • 2 asian pears, cored and diced
  • 1 cup pomegranate seeds
  • 1/2 cup feta cheese
DRESSING:
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 teaspoon honey

DIRECTIONS


  1.  In a large bowl, combine spinach, apples, and pears.
  2. Top with pomegranate seeds and feta cheese.
  3. Wisk all the ingredients for the dressing together and pour on top, if you wish. (I serve my dressing on the side).

Low-Sugar Cranberry Salsa


I warned you that cranberries were coming! When fresh cranberries start appearing on produce shelves this time of year, I can never resist buying bags of them to try out new ways to use the tart red berries. They are such a beautiful fruit, and even though they have none of the sweetness of a typical berry, they are one of those awesome ingredients that can take you in so many directions. I love adding them into sweet things like cookies or scones. They add a fantastic pop of flavor to my morning oatmeal. They are wonderful in savory dishes and salads. And of course I love including them in my fruit smoothies. Here, I decided to take them in the spicy direction, and I'm loving the result! Instead of your traditional cranberry relish, this cranberry salsa is simultaneously sweet, tart, and full of spicy zing (which you can adjust according to your "heat tolerance" - I'll admit, I love to turn up the spice). It was fantastic served with sweet potato corn chips, as well as with cinnamon-sugar pita chips. And since I'm kind of one to push the envelope when it comes to all the traditional Thanksgiving flavors (i.e. salt, pepper, and butter) ... I'm positive it would also be an exciting substitute for cranberry relish on your Thanksgiving turkey (though I can't promise your grandmother would approve).


Cranberry Salsa

INGREDIENTS


  • 2 cups fresh cranberries
  • 2 green onions, chopped
  • 1/2-1 jalapeño, seeded and finely chopped (depends on how strong your jalapeño is, and how hot you want it)
  • 1/2 cup chopped cilantro
  • 1 apple, finely chopped (I used a Gala)
  • 1/8 teaspoon stevia extract (or about 1 teaspoon honey or sugar)
  • 2 tablespoons lime juice
  • 2 tablespoons orange juice

DIRECTIONS


  1. Place half of the cranberries, chopped green onions, jalapeño, and cilantro in a food processor. Blend until all are finely diced, then add in the remaining of each ingredient and pulse the food processor a few more times. You should have a nice mixture, with everything diced, but not completely pureed. 
  2. Transfer to a medium-sized bowl with the diced apple pieces. Stir in the sweetener, lime juice, and orange juice. Mix well.
  3. Serve with your preferred chips ... or over your turkey!

Calabacitas con Elote (Zucchini with Corn)

Fall seems to be the time of year I crave colorful dishes. This one doesn't disappoint! It's a beautiful dish that would be perfect at any Thanksgiving dinner table. It's also perfect if you need a great vegetarian option for yourself, friends, or family. Just add some black beans to this recipe, and it will be a one-dish wonder. Or, feel free to add a little shredded chicken or turkey if you are meat-friendly and this can also be an all-in-one dish for dinner or lunch.


Calabacitas con Elote (Zucchini with Corn)

INGREDIENTS


  • 2 tablespoons olive oil
  • 5 small zucchini, sliced
  • 1 cup frozen corn
  • 1 ripe vine tomato, diced
  • 1 jalapeno pepper, minced
  • 4 cloves of garlic, peeled and pressed
  • Sea salt, to taste
  • 2 teaspoons lemon pepper
  • 1 teaspoon cumin
  • 1 tablespoon raw blue agave sweetener
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped
  • Lime wedges for serving

DIRECTIONS


  1. In a large skillet, heat the olive oil.
  2. Saute the zucchini for about 5 minutes, or until it turns a nice golden brown color.
  3. Add the corn, tomato, jalapeño, garlic, sea salt, lemon pepper, cumin, agave sweetener, and lime juice. Stir to combine. 
  4. Cover and cook on meduium heat for about 15 minutes, or until the veggies are tender, yet still crisp.
  5. Serve topped with fresh cilantro and lime wedges on the side.

Simple Cider Wassail

My list of comfort foods is pretty long. Consisting of pasta, baked potatoes, ice cream, Twizzlers... and loads of others guilty pleasures. But I have to say - wassail has to be one in my top five. Not only does the taste remind me of loads of Christmas memories, but the smell consumes our house - bringing everyone to the kitchen. This recipe in particular is simple, healthy, and yummy (incorporating all of the Pass the Fresh goals!). Most wassail recipes call for cinnamon sticks, but upon going to the store and finding them in the spice aisle - I realized how expensive they can be. So if you have them - great! If not, I think ground cinnamon does the trick just fine. Also, I'm sure you know from recipes past that "sweet tooth" is my middle name. I like to sprinkle a little white or brown sugar in the pot - but this recipe is very forgiving. Add anything your taste buds desire! Hope you and your family enjoy this holiday treat as much as we did.

Simple Cider Wassail
12-14 SERVINGS

  • 128 ounces apple cider (entire jug of Western Family apple cider)
  • 1 can frozen orange juice concentrate + 1 can water
  • 1 can frozen lemonade concentrate + 1 can water
  • 10-12 whole cloves
  • 2 cinnamon sticks (or substitute 2 teaspoons ground cinnamon)

DIRECTIONS


  1. Pour all ingredients into large saucepan. 
  2. Bring to a boil. Reduce heat and let simmer for 20-30 minutes. 
  3. Serve warm.

Indulgence Moment: Pumpkin Spice Cookies


I sure hope nobody's tired of my pumpkin spice obsession quite yet, because I'm not done (almost, but not quite!) I just can't move onto the next season's ingredient (watch out cranberries, here I come!) before I leave you with one more amazing bit of pumpkin spice goodness. Funny thing about these is they are all about the pumpkin spice - no pumpkin at all, just the spice. Which, I'll admit, is fine by me. I mean, I like pumpkin cookies just as much as the next pumpkin-lover, but adding pumpkin to cookies does end up making them into little pumpkin cakes that are fluffy and cake-like rather than chewy and cookie-like. These little guys are great, because by leaving out the pumpkin and being very generous with the pumpkin spice, you get a fantastic cookie-like cookie packed with all that spicy pumpkin flavor that it's really all about anyway.

I made these smaller than the traditional cookie - kind of like little two-bite cookies. This made them very shareable (and I like how eating small things makes them feel like they go that much further!) But, they would make perfectly lovely cookies of "typical" size as well. However you bake them up, I know you'll love this final (I think) salute to pumpkin!


Pumpkin Spice Cookies
3 1/2-4 dozen bite-size cookies (or about 1 1/2 dozen regular sized cookies)  
PREP: 15 minutes (+3 hours to refrigerate dough)     COOK: 8 minutes            READY IN: 3 1/2 hours (with chilling dough)

INGREDIENTS


  • 1/2 cup butter, softened (I use salted - if using unsalted you may want to add a pinch of salt to taste)
  • 3/4 cup brown sugar
  • 1 egg
  • 1/4 cup honey
  • 2 tablespoons pumpkin pie spice (you could reduce the spice slightly if you prefer less, but I went all the way and it was heavenly!)
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons corn starch
  • 1 teaspoon baking soda

DIRECTIONS


  1. In a medium-sized bowl, cream together butter, sugar, and egg until the dough is light and fluffy (5-7 minutes with an electric or hand mixer).
  2. Add the honey, pumpkin pie spice, and vanilla. Mix, scraping the sides of the bowl, until smooth.
  3. Add flour, cornstarch, and baking soda. Mix until just combined.
  4. Cover and refrigerate dough for at least 3 hours (or up to 5 days). 
  5. Once the dough is chilled, form heaping teaspoons of dough into balls and place on a baking sheet, spacing them 2 inches apart and flattening each ball just slightly. Place into an oven preheated to 350ºF and bake for 8-10 minutes. 
  6. Let cookies cool 5 minutes, then remove from baking sheet.

Mini Apple Pie Bites

November is here! Hard to believe, but it's really here! That means Thanksgiving and I tend to associate that with a growing waist band. I don't know about you, but I tend to indulge a lot more over the winter months, and get out of my exercise habits too. It's my mission to keep my pants buttoned up and looking good this season. Anyone with me?!

I have an incredible recipe, in my humble opinion, I'm sharing with you today. I think it's delicious, sweet, and cute. What more could you ask for in a dessert? It's bite-sized - so you can eat as much, or as little as you want. At under 50 calories a piece, I think you can have more than one with your Thanksgiving feast.


Apple Pie Bites
16 SERVINGS 
PREP: 25 minutes           COOK: 15 minutes            READY IN: 40 minutes

INGREDIENTS


FOR THE CRUST:
  • 1/2 cup almond meal (or almond flour works too)
  • 1/2 cup whole wheat flour (I use King Arthur's White Whole Wheat)
  • 1 teaspoon cinnamon
  • 2 tablespoons maple syrup
  • 2 tablespoons unsweetened applesauce
  • 1/4 cup ice cold water
FOR THE FILLING:
  • 1 cup diced skin-on apple (I used a granny smith apple, but any firm, sweet and tart apple would do) 
  • 2 tablespoons unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon maple syrup
  • 1/2 teaspoon cinnamon

DIRECTIONS


FOR THE CRUST:
  1. Preheat the oven to 375º.
  2. In a medium bowl, mix together almond meal, flour, and cinnamon. Add the maple syrup, apple sauce and water. Stir until it forms a soft dough. Divide the dough into 16 even squares. Press the dough into the minimuffin pan (I used a large muffin pan, but only went about halfway up the sides). Use your fingers to press in the dough so that it lines the bottoms and sides of each well.
FOR THE FILLING:
  1. In a another medium bowl, mix together the apples, applesauce, vanilla, maple syrup and cinnamon. Spoon this apple mixture evenly on top of the dough mixture already placed in the muffin pan. 
  2. Bake for 15 minutes, or until the edge of the tarts are lightly brown. Serve warm. Keep these in your refrigerator up to 3 days.

Roasted Pumpkin Seeds

Time to carve those pumpkins! (Or maybe you already have.... go YOU!) If you've saved seeds, this is the perfect way to roast your pumpkin seeds. They are savory and a nice snack. Any if you don't want to mess with the pumpkin seeds, you can buy some at your local grocery store and this recipe will do just fine.

Since I made these before we carved our pumpkins, I used store bought pumpkin seeds. If you are using fresh seeds, follow the same steps, but you will want to cook longer, probably 40-60 minutes total cook time.


Roasted Pumpkin Seeds
4 SERVINGS 
PREP: 5 minutes           COOK: 10 minutes            READY IN: 15 minutes

INGREDIENTS


  • 1 cup pumpkin unsalted seeds
  • 2 teaspoons olive oil
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • dash salt

DIRECTIONS


  1. Preheat oven to 300º.
  2. In a bowl, combine pumpkin seeds and olive oil. Stir until all the seeds are coated with oil.
  3. Add Worcestershire and garlic powder and stir. 
  4. Line cookie sheet with parchment paper. Spread out the pumpkin seeds and sprinkle with salt.
  5. Place in the oven and cook for 10 minutes, or until golden brown. (If you are using fresh seeds, cook 40-60 minutes, stirring every 20 minutes).

Pumpkin Spice Quinoa Granola


This fall, I've become obsessed with pumpkin spice. It might have started with a recent trip to Trader Joe's when I came across - and of course had to have - pumpkin spice granola. It was amazing, and may have been my pumpkin spice downfall this year which has been leading me to put pumpkin spice in just about everything I can think of. To curb the temptation to go back and buy a cart-load of the seasonal granola at Trader Joe's, I of course had to see if I could replicate the stuff myself (as well as make it healthier in the process). I discovered a great recipe, which I tweaked only slightly by including raisins as TJ's did, and using beautiful red quinoa (mostly for the color enhancement - it is such a gorgeous contrast to the oats and gives it such a nice fall look... sorry, sneak peek into my brain there!) The granola is fantastic, and is great for snacking, with milk, or as the perfect topping to other fall-flavored treats that I've been concocting. (I can't wait to share my super-healthy sweet potato pudding that I've been pairing it with lately!)


Pumpkin Spice Quinoa Granola 

 Makes 3 2/3 cups 
PREP: 10 minutes           COOK: 25-30 minutes        READY IN: 40 minutes

INGREDIENTS


  • 1/4 cup uncooked quinoa (I used red), rinsed and lightly dried over a paper towel
  • 1 1/2 cups rolled oats
  • 1/4 cup ground flaxmeal
  • 1/4 cup pepitas (or other seed - I used half pepitas, half sunflower seeds)
  • 1/4 cup pecan pieces
  • 1/2 cup raisins
  • 1/4 cup honey
  • 1/4 cup pumpkin puree
  • 1 teaspoon oil
  • 1 1/2 teaspoon pumpkin spice
  • 1/2 teaspoon cinnamon
  • pinch of salt
  • 1/2 teaspoon vanilla

DIRECTIONS


  1. In a medium-large bowl combine the oats and rinsed quinoa in a bowl and mix. Spread them onto a rimmed baking sheet and toast for 10 minutes in the oven at 325ºF.
  2. Meanwhile, in a small bowl combine honey, pumpkin puree, oil, and spices.
  3. Turn down the oven temperature to 300ºF, remove the oats and quinoa from the oven, and combine with the seeds, nuts, and raisins in the larger bowl. Pour the wet mixture over these and combine well. 
  4. Spread everything onto the baking sheet again, and place in the oven for another 25-30 minutes. Halfway through, use a spatula to turn over the granola, allowing it to bake more consistently.
  5. When the granola appears slightly golden, remove from the oven and let cool. Store in an airtight container for several days.

How to Host a Gourmet Caramel Apple Party


Those who love Halloween are passionate about one of two things: the Scary or the Sweet. I happen to fall in the latter category, and my sweet tooth goes wild this time of year. One of our traditions at our house in the fall is to make "gourmet caramel apples"- fashioned after the decadently coated creations that we discovered at Rocky Mountain Chocolate Factory while living in Colorado. We discovered that we could fairly easily re-create the exquisite treats with some of our own favorite candies, cookies, and chocolate toppings. Some friends got wind of our tradition a few years back, as well as the fact that they and my husband had a shared obsession with Mel Brooks films, and we decided it would be a perfect Halloween get-together to dip caramel apples and watch Young Frankenstein. Thus, our Halloween Caramel Apple Party was born. 

Here's how it works: We invite two or three couples over, instructing each that we will provide caramels and apples for dipping if they will bring a favorite topping or two. We then spend the evening chatting as we crush, melt, and dip, after which we sit down and watch a "light" Halloween film while munching on the fruits (no pun intended) of our labors. We're not big into the super-spooky Halloween flicks, and our film selections have ranged from Young Frankenstein, to Little Shop of Horrors, to Arsenic and Old Lace. Our original crew of apple dippers and Mel Brooks fans have moved on to other life endeavors, but we've tried to keep up the tradition by choosing a few new couples to invite each year. It's a fun and simple excuse to spend an evening with friends, and a Halloween tradition that we've come to look forward to.

very important note: The best part of discovering caramel apples at the Rocky Mountain Chocolate Factory was learning to imitate the way they cut the apples for you. This will revolutionize the way you think about caramel apples! No more sticky mess in your teeth as you try to take ineffective bites out of your apple. To truly enjoy a caramel apple - especially one that's coated in all sorts of chocolate candy goodness, you simply must cut it up. Simply take a large knife, and make four cuts around the core of the apple. You're basically cutting a tic-tac-toe into the apple, with the apple core in the center square (see the picture below). This leaves you with 8 scrumptious slices of apple that are easy to bite, and which each give you the perfect blend of all the wonderful layers of gourmet caramel apple deliciousness!

Gourmet Caramel Apples
4-5 SERVINGS (We typically double the batch and make about 2 apples per couple, so there's a few to share and at least one to take home)

PREP: 15 minutes           COOK: 3-5 minutes in the microwave 
READY IN: 20-90 minutes (depending on how distracted you get with chatting as you make them!)

INGREDIENTS


  • 4-5 medium to large apples (crispy and tart varieties, such as Fuji, Granny Smith, or Gala are best)
  • 1 (14 oz.) bag of caramel candies
  • 2 tablespoons water
  • Wooden sticks (these often come with the caramels in the fall, or you can get them in the craft store)
  • An assortment of candies, cookies, chocolate, and nuts for dipping and drizzling. Some of our favorites are:
    • Crushed oreo cookies
    • Crushed graham crackers or vanilla wafers
    • Crushed pretzel pieces
    • Other crushed candy bar pieces, such as m&ms, Reese's, Crunch, Butterfinger, Heath, etc.
    • Nuts - crushed almond pieces, crushed peanut pieces, pecan or walnut pieces
    • Cinnamon and sugar 
    • White chocolate and dark or milk chocolate chips (for melting and drizzling)

DIRECTIONS


  1. Prep all your ingredients: Wash and dry your apples, and put crushed toppings into individual bowls. You will also want to prepare some pieces of wax paper (one for each apple) on a plate or tray to set the dipped apples on.
  2. Place unwrapped caramel candies and 2 tablespoons water in a medium-sized glass (or other microwave safe) bowl.
  3. Heat caramels for 2-3 minutes in microwave, stopping every 30-60 seconds to stir the caramel.
  4. Once the caramels are completely melted, take an apple with a wooden stick inserted and place it in the caramel. Using a spoon, scoop the caramel onto the apple until it is covered completely. (If your caramel is still very hot, the caramel will tend to be thinner on the apple. If you want a thicker caramel layer, let the caramel cool just a bit.)
  5. Remove the apple from the caramel using the stick and let the caramel set just a bit. Roll in the topping(s) of your choice - it will mostly stick to the warm caramel, but you may need to help it a bit by gently pressing with your hands or the back of a spoon.
  6. Now place the apples in the fridge to let the caramel set even more. Meanwhile, prep your chocolate toppings by microwaving chocolate chips for 2-3 minutes (again, stirring every 30-60 seconds). Once the chocolate is melted, an easy way to drizzle it onto your apples is to spoon it into one corner of a quart-sized freezer bag, cut a very small triangle off the corner of the bag, and squeeze the chocolate out onto your apples. This way you can control where and how much chocolate goes onto the apple. 
  7. Once again, place the apples into the fridge to help the chocolate set. Then, when you can't stand the wait any longer, cut (make sure you read the very important cutting notes!), serve, and enjoy!
You can let yourself go wild and create any combination of toppings that you want - they will pretty much all be amazing! But some of our favorites are: 

  • Oreo pieces with dark and white chocolate

Indulgence Moment: Apple Snicker Salad

This salad is a conversation starter and is great for taking to parties. The last party I took this to, everyone was so inquisitive about it, wondering what exactly was in it. I was having to jot down emails left and right so I could send out the recipe to everyone, which is a pretty good sign that it's a a winner!

It is a perfect fall salad and a great way to use all those yummy apples and Halloween candy. (That is, if you have any candy left after you've pilfered through all of your children's candy. But we've nev-er done that...) I usually make this with granny smith apples, but tart red apples like pink lady will work too. The salt, sour mix is a welcomed surprise to almost everyone that eats this salad. I have yet to meet someone that doesn't like it.


Apple Snicker Salad

INGREDIENTS


  • 4 large granny smith apples
  • 16 ounce light cool whip
  • 5.1 ounce vanilla pudding
  • 1 cup skim milk
  • 3 large snicker bars, chopped/cubed

DIRECTIONS


  1. In a large bowl, mix together for 2 minutes the cool whip, vanilla pudding (package only, not prepared), and milk.
  2. Core and cube apples, and place in the large bowl with the cool whip mixture. Add snickers and mix together.
  3. Chill for about an hour prior to serving.

If serving for a party, I would prepare the day of. The apples tend to get soggy and won't be as crisp or good if prepared the day before.

Pumpkin Oatmeal Cacao Cookies

My sister, Julie, gave me this incredible recipe for trail cookies a couple weeks ago, which I hope to share with you soon! But first I wanted to modify it to incorporate pumpkin, since I'll be the first to admit that is about all I can think about in the kitchen these days. That and cinnamon. I love fall and it's perfect for baking. These are so delicious and the plate of cookies was gone in less than a day at our house. They're only about 50 calories a cookie, and they are the perfect mix of what fall should taste like. It's like a fall party in your mouth!


Pumpkin Oatmeal Cacao Cookies

INGREDIENTS


  • 1/2 cup applesauce
  • 1/4 cup honey
  • 1/8 cup pumpkin puree
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 1/4 cup whole wheat flour (I use King Arthur's white whole wheat)
  • 1 heaping teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon unsweetened cocoa
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup rolled oats
  • 1/4 cup cacao chocolate chips, chopped

DIRECTIONS


  1. Preheat oven to 325º.
  2. In a large bowl (or mixer), combine the first 5 ingredients (applesauce, honey, pumkin puree, egg, and vanilla).
  3. Add all the dry ingredients and mix together.
  4. Hand mix in cacao chips.
  5. Place on cookie sheet lined with parchment paper. Bake for 12 minutes, or until golden brown on the bottoms.

Recipe Refresh: Maple-Roasted Sweet Potatoes

Up until about a year ago, I hadn't bought a sweet potato in my life. I ate them at Thanksgiving, covered in marshmallows and brown sugar (yum!), but thought that was about all they were good for. Boy, was I wrong. Since their growing popularity on Pinterest, sweet potatoes have found a nice home on our kitchen shelves. I LOVE sweet potato fries and recently found this maple-roasted sweet potato recipe that also has the "yum" factor. This would make a great, healthified version of your average Thanksgiving sweet potato recipe - giving you more room to splurge on pie!


Maple-Roasted Sweet Potatoes
10 SERVINGS 
PREP: 15 minutes           COOK: 45-50 minutes            READY IN: 1 hour 5 minutes

INGREDIENTS


  • 2 1/2 pounds sweet potatoes (approximately 8 cups), peeled and cut into 1 1/2 inch pieces
  • 1/3 cup maple syrup
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • Pepper, to taste

DIRECTIONS


  1. Preheat oven to 400º F.
  2. After cutting sweet potatoes, pour into large freezer bag.
  3. Combine syrup, olive oil, lemon juice, salt, and pepper in a small bowl. Pour syrup mixture into bag, seal, and toss to coat.
  4. Evenly spread sweet potatoes in 9x13 inch pan. Cover and bake for 45-50 minutes, stirring every 15 minutes.
