Parmesan Orzo

Remember my obsession with orzo? Well, I'm still on that train and look for any way possible to incorporate it into our meals. This works great as a main dish or as a side dish. It's easy to mix with some meat or vegetable and looks like cute little noodles... what more could you ask for??

This recipe in particular is one of our absolute favorite side dishes. My mother-in-law makes it for us and before I can go back for seconds - it's gone. Everyone loves it and looks forward to when it is on the table.


Parmesan Orzo

INGREDIENTS


  • 2 tablespoons olive oil
  • 1/2 cup onion, chopped
  • 1/2 teaspoon salt
  • 2 cloves garlic, minced
  • 1 1/3 cup orzo
  • 2 1/2 cups chicken broth
  • 1 cup peas
  • 1 cup parmesan cheese (shredded is preferred but grated works as well)

DIRECTIONS


  1. Pour olive oil into large skillet on medium heat. Add onion, salt, and garlic. Sauté for 5 minutes, stirring occasionally.
  2. Add orzo. Cook for an additional 5 minutes, or until orzo turns golden brown. 
  3. While stirring, pour chicken broth over orzo mixture. Reduce heat to low and cover skillet. Cook for 10 minutes, stirring occasionally. 
  4. When liquid is absorbed, mix in peas and parmesan to orzo.

Green Risotto


Confession time: A couple weeks ago my husband went out of town for several days, leaving me alone  (over a weekend even!) with the kids. In order to maintain my sanity, I resorted to my usual coping method of sugar, sugar, and more sugar. Needless to say, by the end of the weekend, I had way overdone it and was feeling pretty yucky. My junk food overload had left me craving healthy, green food to try to rid myself of the yuck. I started pulling out everything green I had in my fridge, and trying to come up with a way to combine it into something that would counterbalance the artificial reds, blues, pinks, and yellows of all the candy and sweets I'd been having. One catch, though, was that it still had to be simple, because I was still playing the single parent and absolutely didn't have the time or energy for something new and exotic.

So, I turned to a basic risotto recipe - one of my tried and true simple recipes. I tweaked it just enough to add in all my green stuff - pureeing peas, parsley, kale, and spinach into a very green "smoothie" mush that would give it a strong green color, as well as also adding in chopped kale, spinach, peas, and dill at the end to add even more green color and texture. It turned out beautifully green, as well as being a delicious hit with adults and children alike. I was especially amazed at how kid-friendly it ended up being - I served it at a potluck dinner with several families with young children, and from what I could tell, most of the kids there (including my own!) ate it up without any apparent questioning of the distinct greenness of it.

Note: If you've never made risotto, and think it sounds complicated and exotic - it's not! I promise you, it is quite simple. Make sure you read all the directions before you jump in, but really the hardest thing about it is that you do have to pay attention to it throughout cooking because the broth needs to be added one cup at a time as the rice cooks. Also, risotto turns out best if you use Arborio rice (which can be found at most any supermarket). I usually don't have Arborio on hand, though, and have found that it turns out reasonably well with plain old short-grain white rice.



Green Risotto

INGREDIENTS


  • 6-7 cups chicken or vegetable broth (preferably low sodium)
  • 2 tablespoons oil
  • 1/4 cup finely chopped onion
  • 2 cups rice (preferably Arborio rice)
  • 2 teaspoons chopped garlic
  • 2 cups frozen peas, defrosted (divided)
  • 1/3 cup chopped fresh parsley
  • 2 cups chopped kale (divided)
  • 2 cups chopped spinach (divided)
  • 1 1/2 teaspoons dried dill
  • 1/4-1/2 cup grated parmesan cheese (optional)
  • 1-2 tablespoons butter (optional)

DIRECTIONS


  1. Separate one cup of your broth, and place it in a blender (or in a container that you can use an immersion blender). Blend it with one cup each of the peas, parsley, kale, and spinach, - making a very green "smoothie." Set aside this cup of green broth until step 5.
  2. In a large skillet or medium-sized pot, heat the oil over medium-high heat, add the onion and saute it until it is soft and translucent. 
  3. Add the rice and garlic, and stir well for about 3-4 minutes.
  4. Turn heat down to medium. Add broth, one cup at a time (adding a small amount at a time is an important part of making risotto) to the rice. Stir frequently until the liquid is absorbed by the rice, then add the next cup of broth. Continue stirring and adding more broth (again, only one cup at a time), until the rice reaches a point that it is uniformly soft, but not mushy. 
  5. When you see that the rice is almost cooked, add the set aside cup of green broth that you prepped earlier. Stir it in as you did with all of the other broth, and let the liquid absorb. 
  6. Finally, when the rice is cooked, fold in the other cup of peas, chopped kale, chopped spinach, and dried dill. Fold in the Parmesan cheese and butter, if desired (these will give the risotto a more creamy, smooth texture). 
  7. Serve warm and enjoy!

We enjoyed this with a simple tilapia filet on the side for more protein. The recipe makes quite a bit, and my kids loved having the leftovers for several days afterward. Just reheat a small amount in the microwave - it gets a little more mushy once it has sat and been reheated, but nobody seemed to mind. I found that this made a really great baby meal, and I've never seen my 1-year-old eat so much green stuff so happily. You could also freeze small baby-size amounts (for example, in ice cube trays) to warm and serve to kids as an easy lunch or even dinner.

Chicken Noodle Pasta

Have you ever tried "Voila Alfredo Chicken?" Although it's a frozen food, we really enjoy it around our house. Yet, every time we buy it we can't help but think how much money we could be saving making it on our own. So that's just what we did! This recipe only takes 30 minutes to make, and is much healthier than the store bought version. Also, it tastes like chicken noodle soup, but in pasta form. What more could you ask for?



Chicken Noodle Pasta
5-6 SERVINGS 
PREP: 15 minutes           COOK: 15 minutes            READY IN: 30 minutes

INGREDIENTS


  • 1 box (16 ounces) penne or other short pasta
  • 2 tablespoons olive oil
  • 1 small yellow onion, minced
  • 2 stalks celery, diced
  • 2-3 carrots, diced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 2 cups chicken, cooked and diced
  • 1 cup frozen green beans, thawed (Optional - I added both the beans and peas for more veggies)
  • 1 cup frozen peas, thawed
  • Salt and Pepper
  • 1 tablespoon garlic powder

DIRECTIONS


  1. Cook pasta 3 minutes less than package instructions. Add green beans and cook 3 minutes. Drain.
  2. While the pasta is cooking, in a large saucepan, combine onion, celery, and carrots. Drizzle with olive oil and cook until onion is translucent. (About 5 minutes) 
  3. Add flour, stirring for 1 minute. Gradually add broth, stirring constantly until it comes to a boil. 
  4. Reduce heat and simmer 7-10 minutes. Stir in chicken, green beans, peas, and season with salt and pepper.
  5. Stir pasta into chicken mixture.

Slow Cooker Chicken Curry

I remember the first time I smelled curry. Growing up, I'd never had the fragrant spice blend because apparently (I've come to learn as an adult), it's one of the few flavors my mom actually doesn't like, and so our family never cooked with it. When I arrived for a summer study abroad in Jerusalem as a fresh, young 20-year-old I'd walk the Old City, and every time I passed an open spice market I was always struck by a particular aroma that felt as old as the stone walls and streets that I was walking along. I never could place exactly what the smell was, and for me it became the fragrance of travel and foreign lands. The mystery of curry lasted for me until I met my husband, who began introducing me to his love of Indian and other Middle Eastern and South Asian foods. Now, I use curry regularly in my cooking, and love experimenting with all the different directions you can go depending on what it's combined with.

This particular curry recipe is one of my absolute favorites. The slow cooking really allows the rich curry flavor to settle into the dish, without making it too strong or spicy. Plus, it is surprisingly easy and flexible - I can prep it in advance with the slow cooker, during nap time so that it's ready to go on a busy evening, or right at dinner time. It is basically one of those "throw it all in the pot and let it sit" recipes, and it always seems to come out well, no matter what. I've shared it several times with friends and family, and each time they've asked for the recipe afterward. One of these days maybe I'll share it with my mom in hopes of converting her to curry, also!

Slow Cooker Chicken Curry
6 SERVINGS 
PREP: 20-25 minutes   COOK: 6-8 hours in slow cooker or 40 minutes on stove top                            READY IN: 60 minutes

INGREDIENTS


  • 1 tablespoon oil
  • 1 red onion, cut into wedges
  • 5 cloves garlic, minced
  • 1 tablespoon finely minced fresh ginger or 1 teaspoon ginger powder
  • 2 tablespoon curry powder
  • 1/2 cinnamon stick (I never have cinnamon sticks, so I just add in several shakes of powdered cinnamon)
  • 3 whole cardamom pods or 1/4 tsp ground cardamom (optional)
  • 1 14-oz can crushed tomatoes
  • salt and pepper to taste
  • 1 pound sweet potatoes (3-4 medium), unpeeled, cut bite-size 
  • 2-3 frozen chicken breasts
  • 1 cup Greek yogurt or light coconut milk (depending on what flavor you're going for)
  • 1 cup fresh or defrosted frozen peas

DIRECTIONS


  1. Heat oil in pan, add onion and saute until soft and golden. Add garlic and spices, stir for 30 seconds, until fragrant, then stir in the tomatoes and bring to a simmer. Season with salt and pepper. 
  2. If cooking in a crockpot, put potatoes on the bottom, then top with chicken and the tomato sauce. Set cooker to low for 6-8 hours. 
  3. Half hour before serving, remove the cooked chicken pieces and shred with a fork. Add the chicken back in, fold in yogurt and peas, and add more seasonings to taste. 
  4. OR without a slow cooker ... Follow directions above, but use a large pot over the stove top. Add chicken, spices, and tomatoes, cover and let simmer on medium-low for 40 minutes. Shred the chicken, then fold in yogurt and peas, and simmer for another 10 minutes. 
  5. Serve over rice.

SIMPLE TIP


If I'm short on prep time, I honestly skip the whole sauce prep, and just throw this all (minus the yogurt and peas) into the pot, give it a stir, then let it do it's magic until I'm ready to shred the chicken and then add the peas and yogurt before serving. The spices and everything cook together into a delicious dish even when I shortcut it this way.
