Healthy Spinach Lasagna Rolls

Okay, I have a confession. I'm OBSESSED with SkinnyTaste.  I go there constantly to find yummy, easy, and healthy recipes! I always come away from that site so excited to try a new one. And let me tell you, these spinach lasagna rolls were definitely worth the excitement... super yummy!!

Another great thing about these cute little roll ups, besides how cute they are, is the easy way to serve them. I feel like whenever I eat regular lasagna I always end up covering the whole plate with a pasta mess. So annoying. But these roll ups are easy to eat and easy to clean up! Something any chef wants in their kitchen!
Healthy Spinach Lasagna Rolls

INGREDIENTS


  • 12 lasagna noodles, cooked
  • 10 oz. frozen spinach, thawed and drained
  • 15 oz. fat free ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 1 egg
  • Salt and pepper to taste
  • 8 oz tomato sauce
  • 20 oz spaghetti sauce
  • 3 oz part skim mozzarella cheese, shredded

DIRECTIONS


  1. Preheat oven to 350º. Pour tomato sauce and half of spaghetti sauce on bottom of 9 x 13 baking dish. 
  2. In a medium bowl, combine spinach, ricotta, parmesan, egg, and salt and pepper. 
  3. Take 1/3 cup of cheese mixture, and wrap in lasagna noodle. Place noodle seam down in baking dish over sauce. Repeat with remaining noodles. 
  4. Pour the rest of the spaghetti sauce over the noodles and evenly spread shredded mozzarella. 
  5. Cover with tinfoil and bake for 40 minutes - or until cheese is melted.

Magleby's Copycat Parmesan Rolls

Whenever I write up these descriptions, I try to save the word "favorite" for my truly "favorite" recipes. Well friends, this is my absolute favorite roll recipe ever! We all have lots of different rolls - homemade rolls, store bought rolls, restaurant rolls - this recipe beats them all.

We have been making these Magleby's "knockoff rolls" for years now and every time we gather for big family or neighborhood get-togethers - these rolls are always a huge hit!

Magleby's Copycat Parmesan Rolls

INGREDIENTS


  • 1 stick (1/2 cup) salted butter, melted 
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon parsley
  • 15-20 frozen Rhodes white dinner rolls

DIRECTIONS


  1. Combine melted butter and parmesan. Mix in parsley.
  2. Roll frozen rolls in Parmesan mixture until they are completely covered.
  3. Place rolls on ungreased baking sheet. 
  4. Cover and let rise. (Takes a little over 3 hours).
  5. Preheat oven to 350º. Bake rolls for 10-15 minutes.

Garlic Chicken Orzo


I have a new favorite ingredient for my recipes: orzo! Don't know what it is? It's like pasta and rice, mixed into one little grain of happiness. Okay, that's a little dramatic. But seriously, orzo is so easy to cook with, and it gives such a good texture and flavor to our dinner. So naturally when we found this garlic chicken orzo we had to try it, and I'm telling you now - it was delicious! I'm not even ashamed to admit that we polished off the entire pan... just the two of us.

INGREDIENTS


  • 1 cup uncooked orzo pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1/4 teaspoon crushed red pepper
  • 2 chicken breasts, cut into bite-size pieces
  • 1 tablespoon parsley
  • 2 cups fresh spinach leaves
  • Grated parmesan (for topping)
  • Salt and pepper (for topping)

DIRECTIONS


  1. Cook orzo in large pot for 8 to 10 minutes, or until al dente. Drain.
  2. Pour olive oil in medium-high heat skillet. Add garlic and red pepper and cook for 1 minute, or until garlic is golden brown.
  3. Add chicken to skillet. Cook for 3 to 5 minutes, or until chicken is cooked.
  4. Reduce heat to medium, and add parsley and cooked orzo to chicken mixture. Then add spinach. 
  5. Cook for 5 additional minutes, stirring occasionally.
  6. Serve with parmesan cheese.

Lightened-Up Zupas Garden Chowder Soup


Do you have loads and loads of zucchini left over from your summer gardens? I don't, but I wish I did. It's my favorite vegetable to cook with. You can make zucchini bread, muffins, brownies....the list goes on. Out of all of those delicious treats, this soup is my favorite way to incorporate zucchini into my meals. Yup, I said it...soup over treats!

Zupas has a specially place in my heart, but sadly this soup only comes out during the summer so I have to get my fix in while I can. The first week I tasted this I think I had it almost every day for the next 2 weeks. I just couldn't get enough. Summer is clearly over (insert crying), but my love affair with this dish is not, so... I brought it to my kitchen. My husband loves that it's easier on the wallet, and we get it all year round!! I've tried multiple recipes and this one is our favorite!


Zupas Garden Chowder

INGREDIENTS


  • 1 tablespoon butter (I use Brummel & Brown yogurt spread)
  • 2 medium zucchini, diced
  • 1 medium onion, chopped
  • 2 tablespoons parsley
  • 1 teaspoon basil
  • 2 tablespoons flour
  • 3 cup water
  • 2 chicken bouillon cubes 
  • 1 teaspoon lemon juice
  • 1 can Rotel diced tomatoes, undrained
  • 1 can low fat evaporated milk
  • 1 can corn
  • 1/4 cup grated Parmesan cheese
  • 1 cup cheddar cheese, plus extra for garnish
  • salt and pepper to taste

DIRECTIONS


  1. In a 5 Qt pan (or larger) sauté zucchini, onion, parsley and basil in 1 tablespoon butter until vegetables are tender. 
  2. Stir in flour, salt and pepper. Gradually add in water. 
  3. Add the bouillon cubes and lemon juice. Bring to a boil. Cook and stir for roughly 2 minutes until it starts to thicken. 
  4. Add tomatoes, corn, and milk. Bring to a boil. Reduce the heat and let it simmer for 5 minutes, or until corn is tender. 
  5. Before serving, add in Parmesan and cheddar cheese. 
  6. Garnish with a little extra cheddar cheese and eat up!

Recipe Refresh: Low Cal Green Bean Casserole


One of the dishes I love having on a Thanksgiving spread is the beloved Green Bean Casserole. My Grandma makes it like none other, and I think that has something to do with the fact that she uses her very own green beans from her garden - frozen and saved just for the feast. In an effort to maintain this dish's yumminess, but also keep it healthy by using only real food instead of canned, I made over this traditional dish and am very pleased at the results! As a comparison, I used Paula Deen's Green Bean Casserole recipe as this is pretty close to how my Grandma would make it.

I'd love to hear your thoughts in the comments below on your favorite Thanksgiving dish. I feel like it's so hard to choose. Is it the pie? The stuffing? The yams? Or does your family have "weird" traditions that you look forward to each year? For instance, my Grandma also serves duck meat each Thanksgiving. It's tradition, and I love it!

INGREDIENTS


  • 4 tablespoons olive oil, divided
  • 4 medium shallots, diced
  • 1 1/2 pounds fresh string green beans
  • 1 pound button mushrooms, sliced
  • 6 garlic cloves, minced
  • 3 cups milk (I used skim)
  • 3 tablespoons flour
  • 1/3 cup + 2 tablespoons Parmesan cheese, divided
  • 1/2 cup chopped parsley
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon pepper

DIRECTIONS


  1. Preheat the oven to 375ºF.
  2. In a medium skillet, on medium-high heat, put a couple tablespoons of olive oil and sauté the diced shallots until they are golden brown and crispy. They should look nice and caramelized (it took me about 6 minutes to achieve this.) Place in a separate dish off to the side.
  3. In the same skillet, add a little more olive oil (about 2 tablespoons) and sauté the mushrooms until they are golden brown. This will take longer than the shallots, about 12 minutes. 
  4. Once the mushrooms are golden brown, add the garlic and thyme. Mix together for 1 minute in the skillet.
  5. Place the mushroom mixture in a separate bowl, off to the side.
  6. Mix together milk and flour until the flour is dissolved. 
  7. In a larger skillet, heat up the milk & flour mixture, stirring frequently, and bring to a simmer. Reduce the heat to med-low until the mixture thickens. This took about 15 minutes.
  8. Remove pan from heat, and add green beans, mushroom mixture, 1/3 cup Parmesan cheese, parsley, salt, an pepper.
  9. Spray a 2 quart casserole dish with cooking spray. Put the green bean mixture in the dish, top with the shallots and 2 tablespoons Parmesan cheese and cook in the oven for 30-35 minutes, or until golden on top and bubbling.

Skinny Chicken Cordon Bleu


I love me a good chicken recipe. There are a select few that I use on repeat - because I know they will turn out and satisfy the family. But we all know you can't stick to the same few recipes forever. The other day I asked my husband something he was craving - and he quickly replied chicken cordon bleu. My first thought was, "Well, that sure isn't the healthiest thing in the world." But boy was I wrong! This recipe from skinnytaste (one of my favorite healthy websites) gives us a great new way to cook chicken and has loads of flavor rolled into it.

Skinny Chicken Cordon Bleu

INGREDIENTS


  • Skinless boneless chicken breasts, cut into 12 thin slices 
  • Salt and pepper, to taste
  • 1 large egg
  • 2 large egg whites
  • 1 tbsp water
  • 1/2 cup breadcrumbs (plain or seasoned)
  • 1/4 cup parmesan
  • 6 slices lean deli ham, cut in half
  • 6 slices reduced fat Swiss cheese, cut in half

DIRECTIONS


  1. Preheat oven to 450°F. Prepare a baking sheet with cooking spray. Set aside.
  2. Spread chicken breasts on cutting board or counter top and lightly pound the chicken slices to make thinner. Sprinkle with salt and pepper.
  3. Place slice of ham and cheese on chicken. Roll and set aside with the seam side down.
  4. In medium sized bowl, whisk egg, egg whites, and water together.
  5. In a separate bowl, combine breadcrumbs with parmesan. 
  6. Dip chicken in egg mixture, then into parmesan mixture. Place on baking sheet seam side down. 
  7. Spray tops with cooking spray and cook for 25 minutes - or until fully cooked.

Recipe Refresh: Spinach Artichoke Dip


Thanksgiving is coming, which means we dust off some of our favorite comfort foods. Of course there are all the traditional meal dishes, sides, and desserts, but there are also the pre-dinner foods that inevitably make a showing.

When I think of one of my favorite appetizers, a nice, creamy spinach-artichoke dip always comes to mind. While the traditional version of this decadent dip is often made with mayonnaise, butter, lots of cheese, and filled with fat and calories, this skimmed-down version is much healthier. With the addition of flavorful ingredients such as feta, hot sauce, and Worcestershire sauce, though, this refresh will still satisfy!


Spinach Artichoke Dip

INGREDIENTS


  • 2 tablespoons olive oil
  • 1 red onion, diced
  • 1 garlic clove, minced
  • 1 10-oz box of chopped frozen spinach, thawed and squeezed of excess moisture
  • 1 10-oz can artichoke hearts, drained and chopped
  • 2 teaspoons Worcestershire sauce
  • 1-2 dashes of hot sauce (e.g. Tabasco)
  • 1/2 cup crumbled feta cheese
  • 1/2 cup fat free Greek yogurt or low-fat sour cream
  • salt and pepper 
  • 3 tablespoons grated Parmesan cheese

DIRECTIONS


  1.  Preheat the oven to 375ºF. 
  2. Heat the olive oil in a medium-sized skillet and add the onion, cooking until translucent. Add the garlic, spinach, artichoke, Worcestershire sauce, and hot sauce. Stir together about one minute, until heated through. 
  3. Remove from heat and stir in the feta and yogurt, and season to taste with salt and pepper. 
  4. Spread the mixture into an 8x8 (approximately) baking dish coated with cooking spray. Sprinkle with Parmesan. 
  5. Bake 20-25 minutes, until the cheese is melted and the mixture is hot and bubbling.
  6. Serve hot with sourdough baguette slices or crackers.

Green Risotto


Confession time: A couple weeks ago my husband went out of town for several days, leaving me alone  (over a weekend even!) with the kids. In order to maintain my sanity, I resorted to my usual coping method of sugar, sugar, and more sugar. Needless to say, by the end of the weekend, I had way overdone it and was feeling pretty yucky. My junk food overload had left me craving healthy, green food to try to rid myself of the yuck. I started pulling out everything green I had in my fridge, and trying to come up with a way to combine it into something that would counterbalance the artificial reds, blues, pinks, and yellows of all the candy and sweets I'd been having. One catch, though, was that it still had to be simple, because I was still playing the single parent and absolutely didn't have the time or energy for something new and exotic.

So, I turned to a basic risotto recipe - one of my tried and true simple recipes. I tweaked it just enough to add in all my green stuff - pureeing peas, parsley, kale, and spinach into a very green "smoothie" mush that would give it a strong green color, as well as also adding in chopped kale, spinach, peas, and dill at the end to add even more green color and texture. It turned out beautifully green, as well as being a delicious hit with adults and children alike. I was especially amazed at how kid-friendly it ended up being - I served it at a potluck dinner with several families with young children, and from what I could tell, most of the kids there (including my own!) ate it up without any apparent questioning of the distinct greenness of it.

Note: If you've never made risotto, and think it sounds complicated and exotic - it's not! I promise you, it is quite simple. Make sure you read all the directions before you jump in, but really the hardest thing about it is that you do have to pay attention to it throughout cooking because the broth needs to be added one cup at a time as the rice cooks. Also, risotto turns out best if you use Arborio rice (which can be found at most any supermarket). I usually don't have Arborio on hand, though, and have found that it turns out reasonably well with plain old short-grain white rice.

INGREDIENTS


  • 6-7 cups chicken or vegetable broth (preferably low sodium)
  • 2 tablespoons oil
  • 1/4 cup finely chopped onion
  • 2 cups rice (preferably Arborio rice)
  • 2 teaspoons chopped garlic
  • 2 cups frozen peas, defrosted (divided)
  • 1/3 cup chopped fresh parsley
  • 2 cups chopped kale (divided)
  • 2 cups chopped spinach (divided)
  • 1 1/2 teaspoons dried dill
  • 1/4-1/2 cup grated parmesan cheese (optional)
  • 1-2 tablespoons butter (optional)

DIRECTIONS


  1. Separate one cup of your broth, and place it in a blender (or in a container that you can use an immersion blender). Blend it with one cup each of the peas, parsley, kale, and spinach, - making a very green "smoothie." Set aside this cup of green broth until step 5.
  2. In a large skillet or medium-sized pot, heat the oil over medium-high heat, add the onion and saute it until it is soft and translucent. 
  3. Add the rice and garlic, and stir well for about 3-4 minutes.
  4. Turn heat down to medium. Add broth, one cup at a time (adding a small amount at a time is an important part of making risotto) to the rice. Stir frequently until the liquid is absorbed by the rice, then add the next cup of broth. Continue stirring and adding more broth (again, only one cup at a time), until the rice reaches a point that it is uniformly soft, but not mushy. 
  5. When you see that the rice is almost cooked, add the set aside cup of green broth that you prepped earlier. Stir it in as you did with all of the other broth, and let the liquid absorb. 
  6. Finally, when the rice is cooked, fold in the other cup of peas, chopped kale, chopped spinach, and dried dill. Fold in the Parmesan cheese and butter, if desired (these will give the risotto a more creamy, smooth texture). 
  7. Serve warm and enjoy!

We enjoyed this with a simple tilapia filet on the side for more protein. The recipe makes quite a bit, and my kids loved having the leftovers for several days afterward. Just reheat a small amount in the microwave - it gets a little more mushy once it has sat and been reheated, but nobody seemed to mind. I found that this made a really great baby meal, and I've never seen my 1-year-old eat so much green stuff so happily. You could also freeze small baby-size amounts (for example, in ice cube trays) to warm and serve to kids as an easy lunch or even dinner.

Recipe Refresh: Low-Cal Fettuccine Alfredo

If you're anything like me, you like a good bowl of pasta. It's an easy "go-to" recipe that pleases the whole family. The down side? Pasta is usually loaded with calories and fat. But don't let that stop you from trying this recipe, friends. This low-cal fettuccine alfredo is a perfect solution for that pasta craving because it's half the calories and fat as your everyday alfredo recipe - but still just as tasty. And it takes less than 30 minutes to make!




Low-Cal Fettuccine Alfredo

INGREDIENTS


  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 teaspoon grated lemon zest
  • 2 teaspoons all-purpose flour
  • 1 cup low-fat milk
  • Salt and Pepper
  • 2 tablespoons Neufchatel or fat-free cream cheese
  • 3/4 cup grated parmesan cheese
  • 3 tablespoons chopped fresh parsley
  • 12 ounces fettuccine, cooked

DIRECTIONS


  1. Melt the olive oil in a skillet. Add the garlic and lemon zest and cook until the garlic is soft. About 1 minute.
  2. Add the flour and cook for another minute, stirring with a wooden spoon. 
  3. Whisk in the milk and 1 tsp salt, stirring constantly for 3 minutes. 
  4. Add the cream cheese and parmesan; whisk until melted. Stir in the chopped parsley. 
  5. Meanwhile, cook the fettuccine. When fully cooked, drain pasta reserving 1/2 cup of cooking water. 
  6. Pour the sauce and 1/2 cup cooking water over pasta. Toss. Season with salt and pepper.
