Almond Meal Rosemary Raisin Crackers


Around our house, we have a Trader Joe's market that we make frequent walking trips to. I find it's  perfect to just load the kids into the stroller and go for a walk - they enjoy the scenery, I enjoy some peace and quiet, and at the end we get to enjoy the sampling snacks that they always have available at Trader Joe's. I find that there is also always some snack or treat that catches my eye there, and that I then become addicted to (which means we get to make more walking trips!). If you have a Trader Joe's near your house, then this particular recipe will taste familiar, because one of their absolute best crackers are rosemary raisin crackers. The raisins and rosemary provide a balance of flavors that is neither salty nor sweet, but instead somewhere in the middle. This means that they are wonderful to eat plain or topped with any number of cheeses.

This recipe is a gluten-free, grain-free version of those perfect crackers. They come out nicely crisp, with that surprisingly addictive flavor combo of the rosemary and raisins shining through. My husband and I both are hooked (we hide them from the kids when I make them!), and a bonus is that baking them fills the house with a fantastic aroma for the rest of the day.


Rosemary Raisin Crackers
Recipe makes about 20 crackers
PREP: 15 minutes           COOK: 15 minutes            READY IN: 30 minutes

INGREDIENTS


  • 1 cup almond flour
  • 1/2 tablespoon olive oil
  • 2 tablespoons cold water
  • 1/2 teaspoon sea salt
  • 2 tablespoons raisins
  • 3 teaspoons raw sunflower seeds
  • 1 teaspoon dried rosemary (or 1 sprig fresh rosemary leaves)

DIRECTIONS


  1. Preheat the oven to 350ºF. Place a sheet of parchment paper on a baking sheet.
  2. In a food processor, pulse together the almond flour, olive oil, water, and salt until well combined. 
  3. Add in the raisins and 2 teaspoons sunflower seeds. Pulse together again until the raisins and sunflower seeds are broken into small pieces. Finally, add in the remaining sunflower seeds and rosemary and pulse until they are spread evenly through the dough. (The dough should be moist but hold together easily, with flecks of raisin, rosemary, and sunflower seeds visible throughout.)
  4. Form the dough into a single ball and place on a 18-inch sheet of wax paper. Cover with another piece of wax paper about the same size on a flat surface. With a rolling pin, roll the dough between the wax paper sheets until it is 1/4-inch thick and mostly rectangular. (I found that it helped to alternate the sides I was rolling on to avoid wrinkles in the paper, by flipping the wax sheets occasionally.)
  5. Uncover one of the wax sheets, and lay that side of the dough down on the parchment covered baking sheet. Gradually peel off the other layer of wax paper to expose the dough. Using a pizza cutter, cut the dough into 1-inch rectangles. (Depending on how uniform you want the crackers, you can cut off the edges and repeat the process of rolling and cutting, or you can leave the edges to cook in non-uniform shapes.)
  6. Bake the crackers for 15-18 minutes, rotating once halfway through. They are done when they start to look golden on top (if the edges are looking too brown but the middle needs to cook more, you can remove the cooked edges and allow the remaining pieces to continue cooking). 
  7. Let cool for 15 minutes, then separate the crackers and enjoy. They can be stored for several days in an airtight container.

Paleo Pistachio Pesto Pasta


Now thats a mouthful! Paleo Pistachio Pesto Pasta. Try saying that 10 times real fast. It's hard, but I don't think you'll want to stop eating long enough to try, it's that good! On my quest to find healthy meals, I stumbled upon my new favorite website, paleOMG.com. She has so many great recipes on there. I have yet to find one that I don't like, or that doesn't turn out. Now I know what you're thinking, how is this healthy with how much fat and calories are in this? Well, its the healthy fat from the coconut oil and pistachios that makes this dish oh so paleo friendly! Give this a shot for your next homemade pesto, it wont disappoint! Friendly pointer...buy the pre-shelled pistachio. It will save you SOOO much time :) 


Paleo Pistachio Pesto Chicken Pasta
4 SERVINGS 
PREP: 10 minutes           COOK: 40 minutes            READY IN: 50 minutes

INGREDIENTS


  • 1 medium spaghetti squash, halved
  • 4 chicken breasts, sliced or cubed
  • 1 cup pistachios, unshelled
  • 1 cup basil leaves
  • 2 teaspoons garlic
  • 1/2 cup to 1 cup coconut oil
  • juice of 1 lemon
  • salt and pepper to taste
  • optional toppings: red pepper flakes and chopped basil

DIRECTIONS


  1. Preheat oven to 425ºF. Cut spaghetti squash in half length wise. Scoop out seeds from squash. Place open side down on a foil lined baking sheet. Cook for 30-40 minutes, or until you can pierce it easily with a fork. 
  2. While you're waiting for your squash, place your pistachios in a food processor and grind until finely chopped. 
  3. Add garlic basil, lemon juice, pinch of salt and pepper and grind until smooth. 
  4. Slowly add your oil until you get your desired consistency. Place aside.
  5. Salt and Pepper your chicken on both sides. Cook on a large skillet under medium heat until cooked through. 
  6. Once squash is done cooking and has cooled, use a fork to shred it and place in a large serving bowl. 
  7. Once all the squash is shredded, add your pesto and combine. You can also add your chicken and combine as well, or serve it on top.

Chili Lime Pork Chops


I have a secret. I have an odd obsession with cookbooks. But only the ones that have pictures to go along with the recipe, and I mean every recipe. Those are the only cookbooks I seem to buy, and I know I can't be the only one. This recipe grabbed me as I was looking through my new Paleo cookbook. I'm trying to cook a variety of foods these days and this was a nice break from the usual chicken or fish recipes. It's healthy, quick to prepare, and can easily be a freezer meal (freeze the sauce separately and add to pork in the skillet the day you'd like to cook it).


Chili Lime Pork Chops
4 SERVINGS 
PREP: 20 minutes           COOK: 6 minutes            READY IN: 26 minutes

INGREDIENTS


  • 2-3 lbs pork tenderloin
  • 2 tablespoons coconut oil
  • sea salt and pepper to taste
Sauce:
  • 3 tablespoons lime juice
  • zest of 1 lime
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • 1 teaspoon apple cider vinegar
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1/4 cup cilantro
  • 3/4 teaspoon onion powder
  • 1/4 teaspoon chipotle chili powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

DIRECTIONS


  1. Cut pork tenderloin into thick cubes, about 3/4 inch thick.
  2. To prepare the sauce, add all sauce ingredients to a food processor and blend until smooth. 
  3. Heat skillet over medium heat with coconut oil. Sprinkle pork with sea salt and pepper and add to pan. Cook for 1-2 minutes or until bottom starts to brown. Turn pork over and cook for another 1-2 minutes. 
  4. Add sauce to skillet with pork and cook until pork is cooked through, about 4 minutes. 
  5. Serve pork with sauce poured over it.

Paleo Chicken and Bacon


I know what you're thinking, "Paleo is a healthy diet, so why is there bacon in this recipe?" I thought the same thing, but paleo is all about protein, so ... enter bacon! We love bacon in our house, so I jump on any recipe that calls for it. My husband always quotes Jim Gaffigan: "You know how you know bacon is delicious? Because we put it on meals that we hate and they instantly become your favorite entree!"  Well, this recipe is super, super simple, so yummy, and it will be done in no time! Sadly, I did not have a sweet potato on hand, but it was still just as yummy without it!


Paleo Chicken and Bacon
2 SERVINGS 
PREP: 10 minutes           COOK: 20-25 minutes            READY IN: 30-35 minutes

INGREDIENTS


  • 2 chicken breast, trimmed
  • 4 pieces bacon
  • 1 cup asparagus (or other vegetable of choice)
  • 1 sweet potato (optional)
  • salt and pepper

DIRECTIONS


  1. If using a sweet potato, cut in half length wise, place cut side down on baking sheet for 20-25 minutes in 400º oven or until soft. 
  2. When you have about 10 minutes left on the sweet potato, place bacon on a skillet over medium heat. 
  3. Dice your chicken into cubes and sprinkle with salt and pepper.
  4. Once the bacon has been cooking for a few minutes, push it to the side and add the chicken to the bacon grease. Cook on each side for about 5 minutes, or until cooked through. 
  5. The bacon will cook faster than your chicken, so once it's cooked take out the bacon and set it on a paper towel to absorb leftover grease. 
  6. Meanwhile, remove the sweet potato from the oven and cut it up into your serving dish. Cut cooled bacon and add it on top of sweet potato. 
  7. Check your chicken. If it's still not done, add a tablespoon of water to the skillet to keep it from drying out. 
  8. Once chicken is cooked through, add it to your dish.
